Quick and Easy Rolls

 

 

1 package dry yeast

¾ cup warm water

2 tablespoons sugar

2 tablespoons vegetable oil

½ teaspoon salt

1 egg

2½ cup sifted flour

 

 

Dissolve yeast in water in 2 ½ quart bowl. Add sugar,

oil, salt and egg. Stir to dissolve sugar and salt.

Stir in 1 cup flour until smooth. Cover with cloth and

place over a bowl of hot water. Let rise 15 minutes.

Grease square 9 x 9 x 2 pan. Stir down batter and add

1 ½ cup flour. Stir until mix and turn onto  floured

board. Knead 3 minutes if sticky, knead in ¼ cup more

flour. Divide the dough into 16 pieces and shape into

balls. Place in pan, brush to slightly with butter.

Cover with cloth. Place on a rack over a bowl of hot

water. Let rise 25 minutes. Bake at 425 degrees for

12-15 minutes until nicely brown. Can also make

cinnamon rolls.

 

 

Tropical Fruits Salad

 

1 medium honeydew melon

2 medium papayas

2 medium avocados

2 tablespoons milk

2 teaspoons lemon juice

½ cup real mayonnaise

½ teaspoon curry powder

1 - 6 ½ oz can salted cashews

 

 

Cut fruits into desired pieces. Blend mayonnaise,

milk, lemon juice and curry powder until smooth. Pour

creamed mixture over fruit pieces and nuts that have

been placed in a large bowl. Gently toss the mixture

until well coated. Refrigerate until serving time.

Best when serve immediately.

 

 

Easy Turkey Skillet Dinner

 

½ cup butter

½ cup carrots, shredded

½ cup onion, chopped

1 - 8 oz package corn bread stuffing mix

1 – 10 ½ oz can cream of chicken soup broth

1 cup water

2 teaspoons poultry seasoning

2 tablespoons fresh parsley, chopped

2 cups cooked turkey, chopped

 

 

In large skillet, melt butter. Add carrots and onion;

saute until carrots are tender. Stir in stuffing mix

and turkey. In small bowl combine soup, water and

poultry seasoning. Stir  into turkey mixture. Cook,

uncovered, over medium heat for about 10 minutes. Stir

occasionally. Sprinkle with chopped parsley.

 

Yield: 4 - 6 servings.

Tip: 1 - 8 oz package herd seasoning stuffing mix may

be substituted for corn bread stuffing mix. Omit the

poultry seasoning.
