Easy
Ham and Fresh Tomato Quiche
INGREDIENTS:
· 1 9-inch pie crust, unbaked
· 6 large eggs
· 1 cup half-and-half
· 1/4 teaspoon dried thyme
1/4 teaspoon
dried parsley
· 1/2 teaspoon salt
· 1/8 teaspoon black pepper
· dash nutmeg
· 1/2 cup shredded Cheddar or Swiss cheese
· 1/2 cup chopped tomatoes
· 1/4 cup chopped onion
· 1/4 cup chopped ham
PREPARATION:
Preheat oven
to 400° F.
Pierce
unbaked pie crust several times with fork; set aside.
In a mixing
bowl, whisk together eggs, half-and-half, and seasonings.
Sprinkle
cheese, vegetables, and ham over unfilled pie crust.
Pour in egg
mixture.
Bake at 400°
for 45 to 60 minutes, or until nicely browned.
Serves 6 to
8.
Ham
Loaf with Pineapple Topping
Ham Loaf Recipe with oats, spices, and a pineapple topping.
INGREDIENTS:
· 1 1/2 pounds ground cooked ham
· 1 cup quick or old fashioned rolled oats
· 1 teaspoon dry mustard
· 1/8 teaspoon ground cloves
· 2 eggs, beaten
· 1 cup milk
· Glaze:
· 2/3 cup brown sugar
· 1/4 cup vinegar
· 3 tablespoons water
· pineapple
chunks and maraschino cherries for garnish, optional
PREPARATION:
Combine ham
loaf ingredients; mix to blend well.
Form loaf to
in a ham shape and place in a 13x9x2-inch baking pan.
Score top
lightly in diamond pattern with a spoon or knife.
Bake at 350°
for 30 minutes.
While ham
loaf is baking, put glaze ingredients in a small saucepan.
Bring to a
boil over medium heat; Cook for 5 minutes.
Remove ham
loaf from the oven; garnish with pineapple chunks arranged as a flower or a few
flowers, with a cherry center.
Pour glaze
over the ham loaf and return to the oven. Bake 30 minutes longer, basting frequently.
Ham loaf
recipe serves 8.
Christmas
Sand Tarts
Ingredients:
· 1/2 cup butter
· 1 cup sugar
· 1 egg, beaten
· 1 3/4 cups sifted flour
· 2 teaspoons baking powder
· 1 egg white, unbeaten
· 1 tablespoon sugar
· 1/4 teaspoon cinnamon
Cream
butter and sugar and stir in well beaten egg.
Sift flour
and baking powder together, blend with first ingredients to make a soft dough.
Set in refrigerator
to chill.
When cold,
place on well floured board (or use powdered sugar), roll out 1/8-inch thick.
Knead in
more flour if needed.
Shape with
cutters.
Brush with
egg white and sprinkle with cinnamon sugar mixture.
Bake on a
lightly greased baking sheet at 275 degrees about 20 minutes or until lightly
browned.
Makes
about 30 cookies.
